French Macaron Craze, and Two-Tier Mango Mousse Cake

Hello everyone! I'm back here doing another post. I've been pretty busy since my last so I apologize for not being able to come back. Today I have some pictures for you to feast your eyes.

I've been improving and perfecting my french macaron flavors since my last post so here are some yummy flavors that people love. Lemon, Vanilla, Chocolate, Coffee, and Black Sesame. All of these flavors are made with natural and fresh ingredients.

My dad loves red bean desserts so in tribute to him, I made a red bean french macaron. The red bean macaron has a hint of creamy coconut.





Karen had requested a mango mousse cake from me which she wanted to serve more than 20+ people in the celebration for her friend Diem's graduation. The mango mousse was made with fresh mango, sugar, egg whites, and heavy cream. Inside it is layered with light sponge cake thats been flavored with mango juice. On the canvas of the cake, I laid fresh mango fruit strips and decorated the tiers with fresh strawberries and blueberries.

Big Macaron, German Coffee Cake, Tank, BMW Cake

My close friend Jennifer got accepted to nursing school and I wanted to congratulate her by making her this huge french macaron. She has always been a huge fan and supporter of my baking, not to mention a good friend also! =) Congratulations Jenn!! This french macaron is sandwiching some fresh raspberry, light raspberry cream, and chocolate drizzle. yuM!





This German Coffee Cake was requested by a return client who wanted to try something new. This cake tastes like the coffee cakes that I used to eat when I lived at Vienna, Austria. The butter cream was flavored with coffee liqueur and decorated with dark chocolate drizzle on top. Each rosette is topped with a chocolate-dipped coffee bean.





My good friend Linda's birthday was in March. For her birthday, I made a Tank because her nick name is actually "The Tank" haha. Under the fondant is made with red velvet cake layered with cream cheese icing... her favorite! =) To define the shape of the cake into a tank, I carved the cake with a serrated knife. Finally I covered the cake with fondant and the details were applied.





Hong had contacted me over Facebook and requested me to make her boyfriend a BMW birthday cake. It is a chocolate flavored cake, layered with ganache and fresh strawberries. The car was made with rice crispy treats and decorated with fondant.

"Girl" Thien's Bachelorette Cake

Hallo everyone! As you know, the title of this post is over a bachelorette cake and if you're not over the age of 18, please don't scroll down further... LOL or scroll down anyway but I warned ya! (Just kidding, it's really not that bad...)

As you've read on my previous posts, "girl" Thien and "guy" Thien are engaged and will be tying the knot early March of this year. Vicky and I discussed about what kind of design to make for Thien's single night out. She provided me some pictures of some examples that her and the bridesmaids were looking in to. They also wanted guy Thien's face on the cake. Everything else was up to me to put together. The Thiens have a dog named Rocket, and I thought that the design of the cake would only be complete if Rocket was in the scene with them heheheh.

So the innards of the cake is a vanilla cake with a light cream filling, sprinkled with fresh strawberries between each layer. I started out with the base of the cake, giving it a hardwood floor look using rolling fondant and brush work with edible food color. I then added the orange carpet which I scissored the fondant by giving it a more carpeted feel. (I chose orange because it was girl Thien's favorite color). After the base was complete, I placed the bed (cake) on top of the base, and added the bed frame that I've made beforehand, then created the Thiens on to the bed. Guy Thien wearing socks and girl Thien barefeet. Afterwards, I made the undergarments and placed them around the room for movement. A red Rockets T-shirt was made because guy Thien loves basketball. And last but not least I made Rocket watching them haha. French Macarons were also made on the side for the gals in three flavors, chocolate, lemon, and strawberry.

Girl Thien asks, "Honey, does Rocket need something?"
Guy Thien replies, "Nah, he's just watching."
and Rocket's thoughts were, "They're going at it again..."

Raspberry & White Chocolate Mousse Cake

Happy Birthday Angelia!!! Gabe's sister, Angel's birthday dinner (Everyone calls her Angel for short) was yesterday and her husband Brandon had asked me to make a birthday cake for her. He didn't mind any flavor and said that Angel likes all kinds of dessert so I wanted to make something that I haven't made for Gabe's family before. The innards of the cake start off with a vanilla sponge cake at the bottom, white chocolate mousse in the middle, and raspberry mousse on the top and surrounding the sides. Then surrounding the raspberry mousse, the whole cake has a velvety thin white chocolate layer on the outside. It is decorated with fresh raspberries in which I bought the day of the dinner party, and on top, I toped the cake with a "Halo" of white chocolate decoration since her name is "Angel". =) Dinner was wonderful! All of her and Brandon's friends were really outgoing and fun. Angel definitely had a great time! Her friends and Brandon enjoyed my cake, but most importantly, the birthday girl enjoyed it! =)

Christmas Sweets!

For many, Christmas is their most favorite holiday of the year and I made quite a load of goodies this year. First, French Macarons in three colors and flavors. The green one is filled with ganache, the red one is filled with hazelnut cream, and the gold one is filled with light caramel cream. I made five dozens and some extra for a Secret Santa dinner that us girls were having. The girls' macarons were packed in cute little chinese to-go boxes. =)





Secondly, Dr. Mike requested that I make four dozen Xmas themed cakeballs for him as a gift to the nurses he works with at the hospital. He requested them to be red velvet in flavor.





Next, sweetheart Kim, requested that I make anything that I wanted for her and her family. I suggested the Pumpkin Cheesecake since it was a big hit at the Thanksgiving party and also it was the perfect flavor for the holiday. =)





Lastly, Pecan Nut Bars! Have you ever had this craving to make something, no matter what time it is during the evening? That is what happened to me last night haha... My best friend John, brought over a pecan bar that his love made and one piece just didn't satisfy my craving... I wanted more! So at 10:00 PM last night, I decided to make some. After it was done baking, you're suppose to let it cool and harden over night in the refrigerator. Not me, I immediately cut myself a piece and ate it while it was still warm. MY GOSH it was sooo good! Today I cut them all into bar pieces and drizzled them all with bittersweet chocolate which gave it a balance in taste. I still have a lot if any of you would like some haha. No really, I'm not kidding.

You can tell that this piece was cut while it was still warm... Look at that caramel, its like its melting down the crust... MMMmmm
